During his career Prof. Vittori has developed an intense research activity, as demonstrated from approximately 240 publications in qualified international journals and from approximately 300 communications to congress that bear his name. Currently (September 2021) he has an H index of 41 and approximately 5400 citations (source: Scopus)
The main thread of this scientific activity is synthesis, purification and analytical characterization of nucleosides, nucleotides and, more generally, variously nitrogenous heterocycles substituted, which were then studied for their activity on various biological systems.
For almost 20 years, Prof Vittori's research interest has largely shifted towards Chemistry of Food, with scientific activities and works on the study and quantization of components present in traces in complex matrices, especially food. There are numerous underway collaborations with companies
